Cucumber-Avocado Salad

We eat a lot of salads at our house, but all too frequently we eat the same kind of salad. A tossed green salad with lots of carrots, radishes, broccoli and other stuff thrown in; sort of junk salad. But today I felt like doing something different to go with our grilled burgers and dogs.

I had a cucumber and yellow squash that desperately begged to be devoured and I had sliced up an Avocado for my grilled burger (if you have never put Avocado on a hamburger you are missing out!). So here is what my salad ended up being:

1 sliced Cucumber

1 sliced Yellow Crook-Necked Squash

some diced Red Onion

several Grape Tomatoes

some Iceberg Lettuce (also placed on the burger)

and of course, the Heavenly Avocado, sliced.

I placed the ingredients on my plate and added some Raspberry-Hazelnut vinegrette by Wish Bone. The results were superb. It is a hundred degrees in Fort Worth right now and this was the perfect cool down salad after eating a grilled hamburger and Italian Sausage.

Avocados and cucumber were made for each other! I will often place some finely chopped cucumber in my homemade guacamole. They are the perfect cool combo for a hot day.
