Peach and Cottage Cheese Salad

I have gotten into a bit of a set routine with my dinner menus and really needed to expand my selections. I have never been good about eating enough fruit and I have had some longings for some of my late mother’s recipes. I remember a salad she used to fix that could double as a dessert that was incredibly simple but wonderful: Peach and Cottage Cheese Salad.

We never eat cottage cheese at my house…probably the last time was 20 years ago when we used it in a recipe for lasagna. So I picked up a carton of cottage cheese a few weeks ago and some canned peaches, something else we never use. We almost always have lettuce on hand, either Romaine or Iceberg,  so last night, on the spur of the moment (though I have been thinking of it for some time), I threw together this simple salad.

Now this was a little bit risky because Dawn doesn’t much care for cottage cheese, and I hadn’t asked her about this, but I occasionally like to live dangerously and just did it as a surprise.

I simply pulled off some cool, crisp, Iceberg lettuce and set up two small plates with beds of lettuce. I opened the can of peaches with my swiss army knife and scooped out several slices of peaches onto the bed of lettuce (note to self- next time refrigerate the peaches first). Finally I opened the carton of cottage cheese and got several spoons full out on top of the peaches, set the dinner table, baked the fish and warmed up the rice, got a tossed salad together and waited for my wife to come home.

As soon as she saw the peach and cottage cheese salad she stated that she knew I had been thinking of Mama. She ate the salad and said it was really good and that made my day.

This is a simple, nutritious, salad that can spruce up the dinner and can double as a dessert. It is a very attractive looking dish as well and in the hot summer months this cool dish hits the spot. The crisp iceberg lettuce gave a satisfying crunch that contrasted neatly with the soft cool cottage cheese and the slippery peaches. The salad was also quite stunning visually with the dark green lettuce with the peaches and the white cottage cheese. Simple, tasty and elegant.
