Revamping the Blog and a Weekly Menu
Sunday, June 29, 2008– In looking at my blog I realized that the recipe section actually gets a lot of hits, but because it was on a page format instead of a Post format, it was just plain awkward to use. I do like input and responses and the page format makes that a bit more difficult. Therefore, I copied all my recipes one at a time and have posted them as separate blog postings. So now all of a sudden my blog looks like a Betty Crocker blog instead of anything resembling a theology blog. That’s Ok, I hope to add a shooting/hunting section to this blog as well! And I will keep you posted on Luke’s Army adventures as well, so there will be a military aspect to the blog. Back in November of 2007 I did a little bit of writing about some church history but that pretty much fell by the wayside; I hope to bring that back as we begin preparing for Reformation Celebration here at Redeemer Church. I have some research assignments on the Puritans coming up so I will hope to share that material here.
LukeĀ is home for about 10 days leave before he reports to the 82nd Airborne Div. at Ft. Bragg. He has existed on Army chow since February so Dawn and I wanted to prepare some of his favorite dishes this week. Friday night and Saturday he was with Jeremy and Phil and some friends at Phil’s place on Lake Grandbury. Phil had some serious meat on the grill for the guys so Luke ate quite well.
Yesterday we made the whole grain berry pancakes with walnuts, pecans, blueberries and raspberries. We made enough to last a couple of weeks! Then, in the evening, I made a huge pot of my world class spaghetti sauce. Today for lunch we had spaghetti and we used a mixture of regular spaghetti and whole wheat. We made a big tossed salad and I popped some whole wheat hot dog buns in the toaster and made some garlic bread using roasted garlic with red pepper. For supper I mad a big batch of my Capt. Ahab’s Tuna Salad and that will last us through the week for lunches as well as supper Sunday night.
Here is the menu for the rest of the week:
Monday- I will use the spaghetti sauce in my lasagne recipe. I will post that recipe later, but basically our lasagne is better than any I have ever had anywhere else. (When it comes to cooking I am not modest!)
Tuesday- We will have a Mexican dinner with some fajitas, tamales, taquitos, and homemade super spanish rice, some sweet potatos, chips with queso and guacamole.
Wednesday- We will work on some of the leftovers and go to Care Group meeting.
Thursday- We may go out to one of Luke’s favorite mexican restaurants with some friends, the Rankins.
Friday- For July 4th I will do a cookout with some Italian Sausage, hot dogs, and some jalapeno burgers.
Saturday- We will start the day with some scramled eggs deluxe, biscuits and gravy and finish the day with some leftovers more than likely.
