QUICK SUCCOTASH

Friday, April 25, 2008- Weekly (?) Recipe “Quick Succotash” First of all, my weekly recipe is turning into a monthly column due to the long hours I am spending at work! Speaking of work, this morning I got up a little bit slower than usual after working a 16 hour shift yesterday followed by my 45 minute commute, so I did not have anything prepared to take for lunch and we are currently out of sandwich meat and we finished the Capt Ahab’s Tuna Salad yesterday. So, what do I take for food today? Well I slapped together a peanut butter and jelly sandwich using whole grain bread, peanut butter and Raspberry Jam. That would suffice for breakfast but lunch was going to be a problem and I was running out of time. I could have resorted to an MRE (I always keep a stash of about 5-6 MRE’s in my car or truck) but I wanted something a bit lighter than that.

I remembered buying a can of lima beans last week and I knew I had some canned corn and some diced tomatoes. Bingo, I made some wonderful, healthy succotash in about 5 minutes. I simply combined the cans of Limas, Corn and Tomatoes, added about 1/4 Tsp of Garlic/Red Pepper, a TSP of Chives, another 1/4 tsp of black pepper, stirred it up well and put a bowl full in my lunch kit.

I just got through eating it…and it was marvelous! Very quick and easy, tasty as all get out, and quite the healthy meal! Read the following articles on Lima beans and succotash:
